I can’t believe my last post was on Wednesday. Where has the time gone. I’ve been busy.
Thursday night we had boy scouts and a swim team try out. My son made the team so starting Monday you can find us at the pool every night. Yes, practice is every night. OH my. I did not know this before hand.
Friday was of course Halloween. We joined some friends in my mom’s neighborhood. We went tricker treating and attended a big Halloween bash in one of the neighbors yards. Hay rides, cotton candy and a bouncy house. It was a blast.
Saturday Morning I woke up with a candy hangover. LOL. Just kidding I only raided the bags twice. We got outside and started the leaves early and finished them up in no time. Made pumpkin pie and took a nice bike ride. Perfect day here in Connecticut to be outside. For supper I made linguine and white clam sauce. OH Yum !
Today… I think I’m going to go out to breakfast now.

I make no time to read real books. I really should but just never seem to find the time. I know someone who makes a point of listening to books on tape in the car. What a great idea. Now a days with computers and ipods downloadable audio books is a great idea. I think I might try it. I just hope I don’t fall asleep behind the wheel.

We went to the park the other day in the city. One of the nice things about this particular park is the historic carousel. For a dollar a ride you can have a some fun. The boys were excited to ride the carousel. We took a few rides before it was time to head home. I was happy that they were still open for the season. I try to get to the gym a few times a week. I want to build muscle fast but just a little. My main objective is to lose weight the right way. I work out on the treadmill and bikes. I also use the nautilus equipment. I haven’t seen a huge difference in my body but I feel better about myself. That counts for something. I wore a skirt the other day. That’s big for me.

It has been a long time, since I pushed a stroller. My children have outgrown wagons and strollers; but I seen some pretty neat ones out there. I thought I had the best stroller on the market at the time. But these new ones are so snazzy. The options and features are just awesome. I like the bigger wheels, they seem like they would make pushing and turning easier. Don’t get this post wrong. I do not want to baby sit your baby.

I have a trip planned next year. I haven’t talked about it at all. Here or anywhere. Not yet. To soon. I don’t want to jinx it.
However, here is a clue. I will need a passport. Yes that is right. Since I don’t have one, I have the forms all filled out and ready to go to get my very first passport. Since my daughter has had a passport for two years that she has used it’s about time mom gets one.

Cleaning up after making fish and chips or pumpkin seeds isn’t always fun or easy. I have a single sink here at my house. The kitchen isn’t huge either. If I could remodel one thing it would be the kitchen. It is functional, however. I am able to cook some pretty nice stuff here.
I would get new cabinets and a panty type floor to ceiling one.
I would get Delta faucets for a double sink.
I would install an island and put the dishwasher closer to the sink.

Fish it’s what’s for dinner!
Fried Fish Recipe
In a bowl, whisk together the flour, baking powder, salt, cayenne pepper, and Old Bay seasoning. Whisk in the beer until the batter is completely smooth and free of any lumps. Refrigerate for 15 minutes. Note: The batter can be made up to 1 hour ahead of time.
Allow oil to return to 350 degrees. Lightly dredge fish strips in cornstarch. Working in small batches, dip the fish into batter and immerse into hot oil. When the batter is set, turn the pieces of fish over and cook until golden brown, about 2 minutes. Drain the fish on the roasting rack. Serve with malt vinegar.

Today, I am going to make pumpkin seeds out of the gunk we pulled out from inside the pumpkins last night. Wow. that was a long sentence.
I’m going to use this recipe.
Preparation:
Rinse pumpkin seeds. Use your fingers to remove all the pulp. Drain the seeds and discard pulp. Spread out on a cookie sheet to dry overnight.
Preheat oven to 250 F. Line a baking sheet with non-stick foil.
Toss pumpkin seeds in olive oil, butter, or spray with cooking spray. Sprinkle with salt, garlic powder, onion powder, seasoned salt, cayenne pepper, or your choice of seasonings. Toss to coat.
Bake about 1 hour, tossing every 15 to 20 minutes, until golden brown.
Cool pumpkin seeds before eating. Store in an airtight container at room temperature up to 3 months or refrigerate up to 1 year.
If you like your toasted pumpkin seeds extra-salty, soak overnight in a solution of 1/4 cup salt to 2 cups of water. Dry an additional day, then proceed as above.
I don’t think you need any diet pills after pumpkin seeds but you probably do after PUMPKIN PIE.
